I really thought I was buying a great resource for my kitchen when I bought "In the Kitchen with Rosie", which contains some of Oprah's favorite recipes. I can only say there is one recipe that really fits into my cooking, that I would make again....Unfried French Fries.

The book begins with an introduction by Oprah, and she explains how she found Rosie. While visiting a spa, (you know how she from time to time gets very health conscious), she was impressed by the chef who could make such low-cal meals. Her name was Rosie. Of course, Oprah enticed her to come and cook for her in her home. She moved to Chicago, and changed Oprah's eating style. (She must be paid a fortune, wouldn't you say, to leave a spa?)

This way of eating is low fat, low sugar, low salt. Each chapter of the book begins an intro about the type of food in that chapter. A few of the chapters are: Soups, salads, four un-fried favorites, pastas, entrees, veggies, desserts.

The one really good recipe from this book that I like is: Un-Fried French Fries. I leave out the cajun spice, but you can use it if you desire.

You need:
5 large baking potatoes, light veg. oil cooking spray, 2 large egg whites, 1 tablespoon Cajun spice.

Preheat oven to 400 degrees. Slice each potato lengthwise into 1/4 inch ovals, then slice each lengthwise into matchsticks.

Coat a baking sheet with 3 sprays of veg. oil. Combine the egg whites and Cajun spice in a bowl. Add the matchstick potatoes and mix to coat. Pour the coated potatoes onto the prepared baking sheet and spread them out into a single layer, leaving a little space between them.

Place the baking sheet in the oven (bottom shelf). Bake for 40-45 minutes, until they are crisy, turning them every 6-8 min, so they brown evenly. Serve immediately.

If you want a book more about gourment type LOW fat cooking, this would be a good choice. But if you want good every day useful recipes, then you would not be spending your money wisely on this book.
