
Love this book!!
I saw a re-run of Emeril's 2005 show with George and Johanne as guests. I knew I had to have this book. I was delightfully surprised that not only were there many, many, many incredible recipes in the book, but also chapters where they explain cheeses, pastas, garlic, olives, capers, chicken stock, anchovies, bread crumbs, pancetta, portion scales, etc etc etc! Invaluable information that I never could have found without this book.
The recipes are simple and easily made, even the ones with many ingredients. It's all explained.
I especially like how they explained at the beginning of each recipe where it came from or who inspired it or their travels abroad. So interesting! I LOVE THIS BOOK! I read it all the time and it inspires me. Maybe someday I can stop by their restaurant and order about 10 things from their menu! No kidding!
This is truly a mainstay cook book in my home. One of the best cookbooks I have, and I am so glad I bought it.
