John Folse is more than one of Louisiana's treasured Chefs he is a great historian of Cajun, Creole history, culture and food. Chef Folse is keeping alive the dishes our ancestors cherished sometimes updating them to fit our times. Like many of the characters in this Encyclopedia Chef John Folse will be remembered long after he is gone. All his books are fantastic but if you can own only one book on Cajun and Creole cooking this is the one.
