Publisher's Note Alan and Daniel have teamed up to write this thoughtful, entertaining, and authoritative book that shows you how to bake superb healthful bread and build your own masonry oven. The first half of The Bread Builders talks about grains and flours, leavens and doughs, the chemistry of bread, and the physics of baking. The second half provides a step-by-step guide to constructing a masonry oven, in typical Chelsea Green style. The authors also profile more than a dozen small-scale bakers around the U.S. whose practices embody the holistic principles of community-oriented baking based on whole grains and natural leavens. The Bread Builders will appeal, to a broad range of readers, including: -- Connoisseurs of good bread and good food. -- Home bakers interested in taking their bread and pizza to the next level of excellence. -- Passionate bakers who fantasize about making a living by starting their own small bakery. -- Do-it-yourselfers looking for the next small construction project. -- Small-scale commercial bakers seeking inspiration, the most up-to-date about the entire bread-baking process and a marketing edge. | Find errors in the product description? Reviews Review created: 07/28/08 by: I have always wanted an outdoor wood fired pizza / Bread oven just like the ones I have seen in Italy and France. This book has all the information we needed to build one. I must add these ovens are not a weekend project. We are in the 4th week of building and Michael my husband has been doing great Job. He is an Ironworker by trade and brick laying is a whole new world. He is right now making the 2nd course of the dome. But I noticed my time to write this review was almost over so I just wanted to say this is a great book if you are planning to build one. I have already started a sour dough starter but it might be about 18 days before I can make my first wood fired homemade loaf and I can not wait. This is a great book and the seller I got this from got it to me in 24 hrs. I am happy and looking forward to many loaves. Review ID: 10000000008106345 Was this review helpful? Report this review Review created: 06/03/08 by: This was a great book that detailed exactly what my builder husband needed to construct an actual bread/pizza oven for our backyard. Our Architect needed this book more than we did to understand the proper placement of reinforcement rebar, clearance, and sizes for our structure. We researched the topic extensively prior to having our plans drawn, and ths was by far the most descriptive book on bread ovens available. It includes various pictures, that help the visual types (like me), and enough information for our Architect to draw a cohesive drawing that would be accepted by our extremely particular municipality for permitting. This book was a greathelp with our project! Review ID: 10000000007380421 Was this review helpful? Report this review Review created: 10/05/06 by: 0 of 2 people found this review helpful. I'm sorry, but I bought the item for a friend, because he does not trust the internet for submitting personal information such as bank account information needed for a paypal account. Thank You.
