Although "The Peaceful Palate" is a very appealing collection of low-fat, healthful, dairy-free and egg-free recipes for every course from breakfasts, sandwiches and soups to gains, main dishes and desserts, Author Jennifer Raymond is a committed animal products free vegetarian who presents colorful and tasty alternatives to mainstream cooking, along with inspirational quotations strategically placed on section pages such as the following by Albert Schweitzer on the "Salads & Salad Dressings" section: "Until he extends the circle of his compassion to all living things, man will not himself find peace". Thus, of course, "The Peaceful Palate" evolves. A compendium of imaginative recipes made with simple, accessible ingredients, these dishes have innate flair, dash, and imagination. A perfect example is Quick Confetti Rice, made with cooked brown rice, water, frozen corn and peas, red bell pepper, curry powder and raisins. "The Peaceful Palate" is delicious, easy, low fat, healthful, and imaginative. Other appealing examples are Winter Squash with Peanut Sauce, Yams with Cranberries and Apples, Pasta with Broccoli and Pine Nuts, and Neat Loaf, (made with cooked brown rice, chopped walnuts, mushrooms, onion, bell pepper, carrots, wheat germ rolled oats, spices and seasonings. As before, the combination of ingredients with just the right spices and seasonings make this a very tasty alternative dish.
