The New Enchanted Broccoli Forest by Mollie Katzen (2000, Paperback, Revised)

I am a gigantic fan of Mollie Katzen and HAVE been since her Moosewood days. Our kitchen collects cookbooks, and on occasion we gather up armfuls of them and box them up for redistribution. The New Enchanted Broccoli Forest ALWAYS makes the cut. It HAS to. There are simply too many recipes in there that we use on a regular basis.

For example, we had the enchiladas tonight for dinner. :)

The white bean and escarole soup is fantastic.

The broccoli and tofu with spicy peanut sauce melts in your mouth.

The cauliflower paprikash is heavenly - especially with fresh paprika. Yum!!

And, the muffins and breads are also very well done.

What I like most about this cookbook is that without being wacky, it gets you to try new things that you wouldn't normally think of. And the food is amazing. If you are interested in including more vegetables in your diet, and even making them part of the main event, this book is for you.

I decided to buy this cookbook after borrowing a friend's. So far the recipes I've tried have been very good. Mollie Katzen's cookbooks are super & for anyone who wants to cook vegetarian recipes, they're tasty & nutritious. There are some colored pictures in this cookbook, which I like as well, which aren't in the older Enchanted Broccoli Forest Cookbook that I had borrowed. There are many recipes I will be trying, but so far I've made a few recipes, such as The Sheperd's Pie, which was very good. Vegetable Upside Down Cake turned out a little dry, which may have happened because I didn't do something correctly, not sure! The Savory Vegetable Cheesecake was something I enjoyed more than my husband. He rated it just average.
