
Wow! --- One of the best Cookbooks Ever!

I bought a new version Pressure Cooker --- and have never used one before. Did I ever need education, and fast! This book has it all, and answers all questions. It has information for the newbies and those with much more experience than I. It explains the advantages and potential hazards of cooking with pressure cookers. The book explains how and why you do certain things; what works, what doesn't work, and what to do when things don't go well. It walks you through the difference between the old type and the newer ones.
Besides being great on information about pressure cooker cooking, the recipes are awesome! I own at least 50-75 cookbooks, and this is one of my best. Miss Vickie has taken a lot of old style recipes and not only modified them for pressure cooking, but have made them more healthy. There are a lot of ethnic versions of recipes of all types - German, French, Asian, Mexican, and all-American favorites. There are a lot of newer recipes and one-pot meals, which make it easy to do a complete dinner. There are always references to what would go well with the dish to make a dinner, and when available, there are alternative ways to change the recipe up (like using difference meats). You KNOW it's a good cookbook when you go to that one first every time! Check it out! I
I guess this could be a review of pressure cookers, too, because I'm completely sold on these. If you don't have a newer version of a pressure cooker, you've GOT to get one. They save time, cost less to cook, and the outcome is WOW! When you have all the different flavors pressure steamed together in one pot, the outcome is purely heaven!
