
Lovin' Dutch Ovens is a great place to start.
My wife and I go to a bi-annual fund raiser picnic and became friends with another couple who always make their dish to pass in a dutch oven. I had lots of questions so they loaned me this book by Joan Larsen. I crammed as if studying for a test, took a few notes, and by the next picnic was able to successfully cook a delicious meatloaf in a dutch oven using charcoals for heat. I had more questions and kept borrowing the book. I put my notes in a PDA that went "belly-up" and lost everything. I don't know why I didn't just buy this great book to begin with because now I am baking, cooking, and frying in the dutch ovens over charcoals. Did you know you can flip the lid over to make a griddle for your pancakes? I have invested in different sized ovens for different recipes. Ive even baked a pie in one. I recommend this book for everyone who likes to cook over fire, but particularly for campers and reenactors.
