Publisher's Note

When Chef Anthony Bourdain wrote "Don't Eat Before You Read This" in The New Yorker, he spared no one's appetite, revealing what goes on behind the kitchen door. In Kitchen Confidential, he expanded that appetizer into a deliciously funny, delectable shocking banquet that lays out his 25 years of sex, drugs, and haute cuisine.

From his first oyster in the Gironde to the kitchen of the Rainbow Room atop Rockefeller Center, from the restaurants of Tokyo to the drug dealers of the East Village, from the mobsters to the rats, Bourdain's brilliantly written, wild-but-true tales make the belly ache with laughter.

Industry Reviews
"[T]remendously appealing, joyously penned....[A]n elegant meld of insider reporting on the food business and personal memoir....Resentment and rage, Bourdain's cherished motivators, fuel many of his life choices but not this narrative. He knows that the curiosity and aggression that might have made him a suicide or a killer are the same that turned him into a cook. He needs to be contained (pretty much every minute of the day and night), and he's found his ideal holding cell in the restaurant kitchen, where he's free to be a barking, swaggering, finger-sniffing, keen-eyed beast."
Los Angeles Times Book Review - Laurie Stone (07/31/2000)

"In a style partaking of Hunter S. Thompson, Iggy Pop and a little Jonathan Swift, Bourdain gleefully rips through the scenery to reveal private backstage horrors little dreamed of by the trusting public....You may find this revolting. I think the guy is hysterical. He's also, beneath it all, devoted to good food and the very difficult life that goes with cooking it professionally."
New York Times Book Review - Thomas McNamee (06/04/2000)

"KITCHEN CONFIDENTIAL discloses further restaurant secrets (you may think twice about ordering chicken, for example), but it's more a rollicking tale of Bourdain's culinary journey....[W]hat is most striking about KITCHEN CONFIDENTIAL is the utmost passion Bourdain displays."
San Francisco Chronicle Book Review - Courtney Weaver (07/09/2000)

Anthony Bourdain serves up a tough, candid, humorous banquet of entertainment and information in Kitchen Confidential. From his earliest culinary experiences as a child in France- his palate for exotic food was captured while slurping a fresh oyster at age 9- Bourdain acts as a no reservations tour-guide into restaurant kitchens from New York City to Tokyo, divulging secrets that may cause the reader to consider whether going out to eat is EVER a good idea.

Bourdain handles his computer keyboard like a chef's knife, slicing and dicing a deliciously funny, delectably shocking, devilishly appealing buffet of words that lay out his 25 years of sex, drugs, and haute cuisine. Honesty and passion drip from every syllable as he shows, in memoir style, how his aggressive, addictive personality led him to become the galley master he is, instead of the assassin he might have been.

Some readers may find his swaggering style and language revolting, but true connoisseurs of food and words will find the ingestion of Kitchen Confidential to be quite nourishing.

Before rising to celebrity status on shows broadcast on the Food Network and Travel Channel, Anthony Bourdain, a chef trained at the Culinary Institute Of America, decided to give us an insight into the Culinary World.
We learn some rather unsavory facts :behind the scene goings on in the Restaurant Business - and folks we are not just talking about your local hole in the wall....but the top Restaurants...the ones we dress up for on those special occasions where Oysters served on a bed of squid ink pasta and champagne are derigueur!
If you know Bourdain, then you'll understand his style. Not a man to hold anything back, he gives us a frank memoir of years working in the business - we learn about a life of sex, drugs, alcohol - the exploits he has seen and been a part of. In true Bourdain style - he is as open about his own behavior as that of his peers - in his personal life as well as career wise.
It is funny and well written, but at the same time, leaves us with that rather uneasy feeling about the places we chose to eat...he gives us tips about our food choices, for example: we think that sunday brunch will be nice, out with th e family enjoying some nice quality food...only now we learn that brunch is often the restaurants way of getting rid of all the food that is going stale or about to pass its peak!! It is as much an expose as a guide to getting the best and worst from out eating out experiences!
If you prefer not to think about what you are eating - maybe not the book for you, but for those who want a truly entertaining, funny and eye opening read, this could be the book for you!
