I was given this book as a gift and was not sure I would ever cook anything from it. It looked real intimidating! I had images of having to convert a 50 gallon steel drum into a grill like they do in Jamaica, but I quickly found out any old grill will do and the more I flipped the pages and read the recipes the more I liked what I read. Simple rubs and marinades that can transform any dish into an island treat. Ms. Willinsky also includes side dishes and desserts and explains the colorful lore and simple technique behind jerk cooking.
