This is an essential part of any cooking enthusiast's kitchen tools, for anyone who has not had the good fortune to attend a French cooking school. The photos of technique are detailed and invaluable and the book has been very well written with wonderful explanations anyone can understand. I highly recommend the book and bought this copy for a budding gourmet cook who is also a grandchild with a thirst to learn the best cooking methods.

Photos with step by step directions on 100's of cooking teniques. The book is easy to understnd and a good book for the home cook or the cooking student.

I'm no culinary mastermind but I do know a thing or two about cooking. I've used the book before I just never purchased a copy until now. The techniques and knife skills in this book are amazing. For all you east-coasters, you can check out his tv program by the same name, that will give you a live demonstration of the techniques used in the book. Although the illustrations aren't the best, you can definitely get what he's talking about. Each recipe/technique is broken down into several illustrations. Understanding the book, as long as you have some sense of a kitchen, is simple. Great book for $11.00 on ebay, buy it new at barnesandnobles for $40.

Had all the necessary information for fancy cooking, and yet still showed how to do each easily. The book had lots of photos which helps the reader to replicate the actions used.
