I'm no culinary mastermind but I do know a thing or two about cooking. I've used the book before I just never purchased a copy until now. The techniques and knife skills in this book are amazing. For all you east-coasters, you can check out his tv program by the same name, that will give you a live demonstration of the techniques used in the book. Although the illustrations aren't the best, you can definitely get what he's talking about. Each recipe/technique is broken down into several illustrations. Understanding the book, as long as you have some sense of a kitchen, is simple. Great book for $11.00 on ebay, buy it new at barnesandnobles for $40.
