This is the third copy of the book that I've purchased...one for me, and two for some professional cooks that I know. It opens the regional cook's mind to the origin and ingredients in dishes from around the world.
I wouldn't know what to do without this guide in my kitchen! It is well-written and well-presented, and I feel that it is my authority when it comes to authentic menu items.
