
Splenda Cookbook Makes Sweets Allowable, Enjoyable

Marlene Koch's Fantastic Food With Splenda is an excellent cookbook for dieters and diabetics. It begins with a lot of information about Splenda, about nutritional guidelines, counting points for Weight Watchers and diabetic exchanges. I've lost 30 pounds in the past year using both Atkins and Weight Watchers guidelines, so substituting Splenda for sugar helps me enjoy sweets that I would have bypassed.
I've tried smoothies (4 POINT-mmm), hot cocoa mix-1 POINT -but was very clumpy in the bottom of the cup; may need further adjustments, breakfast bars at 2 POINTS a piece, and very filling. The pumpkin muffins were too cloyingly sweet for my taste--even the people at work didn't devour them quickly. The cream cheese-filled pumpkin roll was delicious, and my diabetic mother thought so too. My daughter-in-law, a type-1 diabetic, enjoyed the Quick Cinnamon rolls at 2 POINTS a piece, or an exchange of 1 carb, 1/2 fat.
The book also includes recipes for salads and salad dressings, main dishes, vegetables, desserts, sauces, condiments--it's a real find. In fact, I checked it out of the public library first, discovered it was a "must-have" for me, and found a great deal for it on ebay.
