This is a book that every kitchen should have. I am a meat cutter by trade and this book will help the everyday housewife (or husband) be able to purchase those large cuts of meat at Costco and take them home and save money. I also use this book to teach the assistant meat cutters that I have work for me. It helps a lot with the basics.
