Culinary Artistry by Andrew Dornenburg, Karen Page (1996, Paperback)

I got this book because it is on the reading list for the Culinary Institute of America for future students. I started reading the book and it was excellent. The book goes over different foods and what goes with them. If you like cooking or food in any way you must read this book

I needed to buy the book for a class but found it very interesting and will be keeping it forever. Lots of information about creating dishes and menuing with lots of interesting recipes.

if you have ever wondered what to serve with your main course this is the book for you-not only does it tell you what flavourings/spices/herbs and vegetables go together they also highlight which ones are"classic" combos- ever wonder what spices or flavours are particular to any cuisine-this book tells you-not many recipes-but an absolute wealth of information-this deserves to be on every cooks shelf

This book came highly recommended by a number of professional chefs that I have met on various boards. On receiving it I discovered it's better than they said.

Through interviews with a number of well known and respected chefs and an amazing compilation of information they present a perfect basis for the novice, or intermediate cook or aspiring chef to play with ingredients to develop their own taste and style. Truly this book is "playground equipment" for the foodie!

It was so helpful for my step-daughter who recently graduated from culinary school. even turned a few heads of some friends who are also chefs and had never heard of it.
