The Complete Meat Cookbook by Bruce Aidells, Denis Kelly (1998, Hardcover, Illustrated)

Contains alot of great, simple and easy to follow recipes. The book is filled with alot of recipes I will use and not alot of bread and pastry recipes I do not need. I like the fact that it explains the history and tips to purchasing the best cuts of meat and the reviews of the variuos cooking methods for each meat and the organization of recipes by cut is a real time saver.
