The Bold Vegetarian by Bharti Kirchner (1995, Paperback)

This is a very good, easy to follow cookbook. The ingredients are readily obtainable, and the recipes are simple to prepare. I bought as a gift for a friend who no longer eats meat, and I'm sure she'll love it.

This cook book is full of wonderful vegetarian recipes with an international flair. Nothing bland about these healthy and filling dishes. Even the desserts are great and out of the ordinary. I first picked it up looking for something different to do with squash, it has become one of my favorite cookbooks. The ingredients have not been hard to find or overly seasonal and the preparation is not overly difficult, just some chopping, one pan cooking, gourmet tasting. I highly recommend getting this book.
