This is good cookbook, it explains Bobby Flay's grilling secrets in such a way that is impeccable. In this book you will find recipes from his well known restaurant Mesa Grill located in Manhattan,NY. My favorite part of the book is that he stresses the fundamentals of grilling such as: "what you need" ,and, "what you don't need" along with the "how to know" questions. For example, what you need to start your charcoal grill, how long, and how hot your grill should be before you start cooking. Also mentioned in this book are Bobby's little tricks for telling when your meat is rare, medium rare, or well done. The benefits of charcoal grilling vs.gas and vice versa I found to be especially helpful. There is really only one flaw about this book out of the 285 pages there are only 16-colored photo's of 15 recipes, which means the other 110 recipes are not photographed. Overall Bobby Flay's recipes in this book are so unique that it is a must have for every beef, chicken, pork and even fish lover!
