This is a must have. More product test (I just love reading) and 350 foolproof recipes. Recipes this book dives into - Quick Breads, Muffins, Biscuits, Scones, Yeast Breads, Rolls, Pizza, Focaccia, Flatbread, Pies, Tarts, Pastry, Crips, Cobblers, Fruit Desserts, Cakes, Cookies, Brownies and Bar Cookies. This book is full of pages of tips, history and lots of whys answered. This cookbook is even just a great read.

Chewy, Fudgy Triple-Chocolate Brownes - Any Chocolate fan would just love you forever for this one.

  Excellent resource guide but dated

Cook's Illustrated is closing these out, probably making way for an updated edition. A recipe I saw on PBS in 2009 had been updated from what is in this book. I imagine most recipes will remain unchanged however, so if you can pick up a 2004 edition under $15 including shipping like I did, it's probably well worth it. Otherwise, wait for the new edition. But the 2004 edition is still a very thorough baking technique guide with outstanding recipes.

As a fan of the cooking show "America's Test Kitchen" I was NOT disappointed. This book is beautifully written, and the detailed illustrations will inspire even the most inexperienced baker. The cooks test ingredients, equipment, and techniques - and all of this valuable information is included in each recipe.
