The Art of Mexican Cooking by Diana Kennedy (1989, Hardcover)

Ok, maybe not THE Bible but probably one of the most informative books you can buy about traditional Mexican cooking. The recipes use traditional foods and techniques so if you want to learn about "real Mexican food" this is a great place to start. There is a lot of information about cooking tools and ingredients too. If you love Mexican cooking then this cookbooks is a must-have.

This is an excellent book, I really love it. I bought it because Diana traveled to Mexico to compile the recipes. She visited families and asked for the recipes. On her book she wrote the names of the families that gave her the recipes. The recipes are accurate recipes, so just follow instructions and you don't have to be guessing, and your dish is going to be perfect.
This book has a great value because she honored the traditional recipes of one country, not her own country so it's more valuable.
